Tzeltal-Tzotzil coffee originates from the northern region of Altos de Chiapas, Mexico, where it is grown and processed by the Cooperativa de Producción Tzeltal-Tzotzil, SCL. This cooperative, established in 1986, consists of 262 members and partners, with many belonging to the Tzeltal and Tzotzil people groups for whom the organization is named.
Grown at altitudes ranging from 660 to 1460 meters above sea level, Tzeltal-Tzotzil is cultivated using Bourbon, Mundo Novo, and Typica varieties. The coffee cherries are carefully processed using the cooperative’s own micro-mill, ensuring meticulous depulping, fermentation, and sun drying. In addition to coffee, the members of the Tzeltal-Tzotzil cooperative also farm and process large quantities of honey. They prioritize organic practices to protect their environment and ensure high-quality production.
