About the KALITA WAVE
The Kalita Wave has a fat bottom geometry. It has three triangulated holes that allows for the filter to stay on top, leaving room for the coffee to extract. This leaves a larger margin of error for easiness. It is also designed to help with heat protection.
STEP 1: PREHEAT YOUR VESSEL
Preheat your vessel, also getting rid of the paper taste of the filter.
STEP 2: ADD COFFEE
Add freshly ground coffee, bloom and pour to 60-70g. Stir right away.
STEP 3: FIRST POUR
At 30 seconds, pour to 200g. Pour to the edge of the filter.
STEP 4: SECOND POUR
Pour to 300g going from in to out, and back in again.
STEP 5: FINAL POUR
Pour to 451g. Pour from the outer edge into the middle,
working your way back out.
STEP 6: SWIRL
Gently swirl your vessel and carafe for an even extraction.
