About the CHEMEX
The Chemex Brewer is a large-set vessel that is perfect for group coffee sessions. It is used with a specially designed Chemex bonded filter, which is 20-30% thicker than other filters. Although this means a longer brew time, it ensures the highlest level of up cup clarity you can find on a manual brew method
STEP 1: FILTER
Place the triple fold on the bonded filter where the pour spout is,
ensuring that the filter doesn’t collapse.
Hold the filter down and add water to preheat the vessel and to wash away
the paper taste. Because of the thickness of the filter, preheat with more
water than usual. Pour out the water.
STEP 2: ADD COFFEE
Add 50g of freshly ground coffee. This will end up to be 640g out, with a
1:16 water ratio. The recommended grind size is:
This is a bigger brew because the Chemex is a bigger vessel.
Spread out the coffee to help it to saturate as evenly and quickly as possible.
STEP 3: BLOOM
Add water, weighing out to 100 to 110 grams – double amount of coffee.
Allow 45-60 seconds for degassing. Stir liberally.
STEP 4: FIRST POUR
Pour to 320g, which is half the volume of the total brew. This is the biggest pour,
establishing a hot, slurry temperature.
Tip: Make sure the filter is not collapsing on the pour spout. If it is, it will
slow down the traction.
STEP 5: SECOND POUR
Pour to 320g, which is half the volume of the total brew. This is the biggest pour,
establishing a hot, slurry temperature.
Tip: Make sure the filter is not collapsing on the pour spout. If it is, it will
slow down the traction.
STEP 6: FINAL POUR
Reincorporate the coffee and pour to 640g. Give your vessel a good
swirl to encourage it to extract evenly.
STEP 7: ENJOY WITH FRIENDS
Throw out the filter, swirl your coffee and find a buddy to share with!
